A quick delicious breakfast to satisfy just about anyone. This dish was a Saturday morning staple at my house when I was growing up. I’m not going to lie, it wasnt my favorite but now that I am all grown up I realize that its not that I didn’t like it, I was just a kid wishing she could have what most kids in my neighborhood were having on a Saturday morning; a bagel with cream cheese, an egg sandwich or pancakes and sausage. Today this is a treat. Reserving time at my mothers table for this sweet cream on a Saturday morning is not an easy task. To get this recipe exactly as she makes it, I had her make it in my presence so that I could actually measure the ingredients since she eyeballs EVERYTHING! When I was around 12 years old, I remember asking for measuring cups, a cupcake tin and a whisk for Christmas simply because we had never owned any of those kitchen tools. And still today, I can say that most Puerto Rican kitchens are yet to own these tools.

Harina De Maize
2.5 Cups Milk
1.5 Cups Water
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup + 2 TBS fine corn meal
2/3 cup granulated sugar
- Combine milk, water, cinnamon, salt and corn meal in medium pot.
- Bring to stove and cook on medium heat, continuously stirring until thickened.
- Stir in the sugar, cover, lower heat and let simmer for about 5-8 minutes. or until your desired consistency.
