Harina De Maize (Cream of Corn)

 

Harina De MaizeA quick delicious breakfast to satisfy just about anyone.  This dish was a Saturday morning staple at my house when I was growing up.  I’m not going to lie, it wasnt my favorite but now that I am all grown up I realize that its not that I didn’t like it, I was just a kid wishing she could have what most kids in my neighborhood were having on a Saturday morning; a bagel with cream cheese, an egg sandwich or pancakes and sausage.  Today this is a treat.  Reserving time at my mothers table for this sweet cream on a Saturday morning is not an easy task.   To get this recipe exactly as she makes it, I had her make it in my presence so that I could actually measure the ingredients since she eyeballs EVERYTHING!  When I was around 12 years old, I remember asking for measuring cups, a cupcake tin and a whisk for Christmas simply because we had never owned any of those kitchen tools.   And still today, I can say that most Puerto Rican kitchens are yet to own these tools.

Harina De Maize

2.5 Cups Milk

1.5 Cups Water

1/2 tsp cinnamon

1/4 tsp salt

1/2 cup + 2 TBS fine corn meal

2/3 cup granulated sugar

  1.  Combine milk, water, cinnamon, salt and corn meal in medium pot.
  2. Bring to stove and cook on medium heat, continuously stirring until  thickened.
  3. Stir in the sugar, cover, lower heat and let simmer for about 5-8 minutes. or until your desired consistency.
  4. Enjoy
